End-Of-The-Month Veggie Chilli

Here's a veggie chilli for when you're counting down to payday (The Big Bang Theory's Sheldon Cooper would tell you it isn't a chilli because it contains beans, but I don't care. He's fictitious.).  It's a go-to in this house when other supplies are running a bit low. Apart from the fact that it costs pence per person to make, it's meat-free (and we generally eat too much meat in this country), high in fibre, and it goes really well with lots of different carbs: rice, tortillas, potatoes - whatever we have.



To feed my lot (one of them won't eat it, so this would serve 4 as an accompaniment to baked potatoes), I need the following:

1 tin chopped tomatoes
1 tin baked beans
1 tin kidney beans or whatever other beans you fancy
Tex Mex seasoning to taste (about 2 tsp)
Cloves of garlic: again, to taste

Add the tomatoes and the baked beans to your pan . Don't drain the sauce from the baked beans: this saves you needing to season with salt. Rinse the kidney beans and add them along with as much garlic and Tex Mex seasoning as will make your family happy. I keep a tin of Fiddes Payne Tex Mex seasoning in the cupboard: it's useful for all sorts of things. 



Simmer over a medium heat until - well - until it's hot, really. Let it reduce a little if you want a thicker sauce. Taste to check your seasoning. Serve with whatever you've got lurking in the cupboard. Add another tin of tomatoes and a couple of empty tins' worth of water plus a stock cube or two and you've got a soup.
